Great post. I'm going through the same, but switching to iCal is a pain since I'm in a group environment. It just doesn't have the same all-in-one capacity like Entourage, nor does it offer the same snooze reminders ability.

Just wasting time until I find a solution or it 'magically' fixes itself … hahaha. (I wish)

I just wanted to point out that although you did your research on Google and found a lot of people facing the same problem, it still doesn't mean that its a bug in the system.
You have to remember that there are millions of people using software from these 2 software makers. If about 100 of them have this problem, what's the percentage?

Another important point to remember is that most people who post their problem on the internet not only post it on one website but many. Most of the time the entries made and usually by the same person.

With all that said, I do believe that the issue you're facing is genuine. Who is to be blamed for this? I'd say Apple. I'm not an advocate of M$. In fact, I hate them but this doesn't mean that I should point the finger at them for all the problems in the world. Apple made the iPhone and included the Sync feature for it to work with Entourage. The should fix the problem.

Besides, the iPhone was launched after M$ launched Office 2008. Apple should have ensured that it was fully compatible.

I wish I could have solved the problem for you, Will. Because unfortunately iCal's event invitations aren't like Mastercard - they're not accepted all around the world. But still glad I made the move.
